We are excited to introduce an Asahi (あさひ) cultivar that is grown in a historic terroir within Uji, Kyoto — the birthplace of Japanese tea culture.
A truly premium matcha, this variety is characterized by a bold and rich aroma. The first sip reveals a decadent, deep umami profile that is savory and oceanic (reminiscent of uni) with a hint of corn-like sweetness. The texture, smooth and buttery, lingers on the palate.
Production adheres to traditional methods, cultivating with only organic fertilizers and employing a time-honored shade-growing technique. This variety, in particular, is Honzu-shaded, meaning it uses rice straw and reeds as a canopy. It is a sustainable technique that is rarely practiced due to the intense labor it requires. Each batch is handpicked and stone-milled in small quantities.
